SPINNING PERSIAN: honey frozen yoghurt with saffron fairy floss



I recently stumbled upon a Persian grocer in my old home-town, where I discovered really cheap (and juicy) dates and yoghurt, an amazing selection of Rosewater and of course, the Persian Fairy Floss (cotton candy)!

This recipe is so basic and really quick to make, but it works well because of the great combinations of flavours. The saffron fairy floss isn't as sweet as your typical pink or blue fairy floss, but has a delicate flavour and sweetness. The yoghurt I bought was a bit more watery than other brands of yoghurt, so the frozen yoghurt was a bit icier than usual.

I was lucky enough to use honey from my Dad's backyard beehive. The honey is so much lighter and purer than the store-bought honey. And it tastes extra special, knowing that your Dad is the bee-keeper!




Spinning Persian

Makes about 1 litre

Ingredients:

  • 750g natural / greek yoghurt
  • honey (as little or as much as you like. I used about 2 tbs to mix in and an extra 1 tbs to drizzle on top)
  • saffron fairy floss

Method:
  • Mix the honey into the yoghurt. Taste to check the level of sweetness and add more honey if you have a real sweet tooth!
  • Add mixture to ice cream maker bowl and churn in your ice cream maker on the desired setting.
  • Serve frozen yoghurt, drizzle with extra honey and decorate with fairy floss.
