GOLDMEMBER peanut butter gelato with salted caramel crumble


I've been so addicted to peanuts lately, munching on them ever since my Indonesian friend made us an amazing Peanut Sambal for dinner the other night. So I thought I'd channel this addiction into the form of a Gelato.

I based this recipe off this Peanut butter & salted caramel ice cream, but my salted caramel ended up turning into more of a crumble. I used a raw sugar, rather than a caster sugar, so the granules were larger and didn't melt as easily. I panicked when trying to melt the sugar, madly throwing in a dash of cream and knob of butter to try and rescue it. I was pretty happy with the accidental result, although I'd recommend making it while your ice cream is cooling, otherwise you'll probably have none left by the time the ice cream is ready. It's so more-ish!


Goldmember 

a salty peanut butter gelato, with a salted caramel crumble

Ingredients:
300g caster sugar
50g unsalted butter
300ml thickened cream
5 egg yolks
500ml full-cream milk
6 tbsp smooth peanut butter (or crunchy, however you like it!)
pinch of salt

For the salted caramel crumble:
100g raw sugar
dash of cream (1 tbs)
knob of butter (1 tbs)
a large pinch of salt


Method (Gelato):
  • Heat the sugar in pan over medium heat until it melts, stirring occasionally with a wooden spoon.
  • Once sugar has melted and caramelised, add the butter and cream and stir, re-melting the mixture until smooth.
  • Whisk egg yolks in large mixing bowl and pour cream mixture slowly whilst whisking.
  • Whisk in milk
  • Using a strainer, add mixture into a clear pan and heat mixture for about 5 minutes on medium-heat, until the mixture thickens slightly. Be careful not to overcook!
  • Take off heat and stir in the peanut butter until smooth.
  • Cool mixture in fridge (or freezer if you can’t wait!) then churn in your ice cream maker, mixing in crumble before serving.

Method (Salted Caramel Crumble):
  • Melt the sugar in the same way.
  • Once caramelised, remove from heat and add the salt dash of cream and butter and stir rapidly.
  • Pour onto baking sheet-covered tray and leave to cool. Mix into ice-cream.

  3. I was lucky enough to try Goldmember. It was delicious and difficult to stop eating.
    Like a rich peanut butter gelato with crunchy bits you go searching for. The crunch made it remind me of Crunchy-Nut Corn Flakes.

  4. Legend has it that a secret peanut butter ice cream recepie was lost from the ice cream dynasties of centuries past. Elderly scholars maintain that this goldmember recepie only recently re surfaced early this century in the iron grasps of a battle hardened Druid. Many explorers and treasure hunters went to great lengths to infiltrate this Druid's encampment, only to be slaughtered by the masses. I suppose the thesis statement would be that this Druid ate the remains of these trespassers with some nuts and them shat out what you are all now referring to as goldmember.
